We’ve had a lot of great company since we moved back home just over 3 weeks ago, but I haven’t really cooked yet just for us. I made soup one day, salmon cakes, and lots of salads, a few salad bars, a couple quiches.. meals for potlucks and we did have a couple dinner parties… so I guess I have been cooking… but not your typical work week, “honey I’m home, what’s for dinner” meals. It’s usually me asking myself that, to be honest.. Bill doesn’t ask.. he’s happy with a loaf of bread and butter..
Funny thing, I was supposed to cook a nice dinner on Saturday. Bill’s favourite old boss and his wife were to come on Saturday for an early dinner, (or so I thought) but came on Friday….. (wrong info given to the cook, ahemmm)
They were on a tight timeline, just passing through, so not enough time for me to cook from scratch when they surprised us at the door at 530 pm while we were in the middle of an after work party with my crew. 🍻 I had nothing prepped or thawed.. except for salad fixings I had just bought.
Backtrack: I had invited my work crew over for Friday night libations and nibblies so they could come see the house, the fruit of their labour.
We were in the middle of watching the slide show of the house before, during, and after construction when the doorbell rang out “Auld Lang Syne” Surprise!! Not a problem, I made the great salad I had Pinterested, and we ordered pizza.
(Pinterest pic above) it’s greens, pomegranate, orange, feta, pistachios. Dressing in the middle so you can dress your own. Cathy was asking me about the salad dressing I was making, and they nibbled on extra bits while I made the wreath. So lovely. It’s what I had dreamed of.. chatting with guests who were seated comfortably, glass in hand, chatting while I prepped a meal to share.
We never could do this before, our kitchen was so closed off from the rest of the living area. It felt so natural.. but as I looked back on the evening later, i realized how very special it was, and how much I look forward to many many more nights like this.
Funny thing, I had said to Bill a couple days before how I wanted to learn to be more spontaneous with guests.. and then it happened.
Guillermo texted me today while I was still at work towards the end of the day.. “you want Chinese for dinner?” And I immediately replied. “No, I wanna cook!” It’s such a pleasure to cook in this new kitchen. I was looking forward to it.
I pulled a trick out of one of my mom’s dear friend’s sleeve, and first cut up some raw veggies on a plate and poured myself a big glass of water, to stave off hunger while I prepped. (I know a lot of you do this) I often come home from work Hangry, if you know what I mean.. and I wanted to enjoy the next hour and a bit.
The meal was simple, lemon garlic chicken breasts with oven roasted mini potatoes and ginger (&brown sugar for my sweet toothed Prince William) crusted roasted carrots with a nice big side salad
Simple, clean, fresh, and yummy. I did most of the clean up while I cooked (another joy in this kitchen!) set the table and we sat down together to enjoy and chat. We’ve had too many rushed meals lately of either leftovers or something quickly warmed up.. it was refreshing.
My dessert? Guillermo finishing the cleanup while I started to blog.. ❤️😉
