pistachio encrusted wild Alaskan Sockeye Salmon and Jamie Oliver’s Risotto?
That was tonight’s creation for dinner. I came home, put on the jazz.. pulled out all the ingredients and my 2 recipes to try out.
I should have read them both over very carefully first.. then I would have known that the Risotto takes much longer to cook than the salmon. No prob, I caught it in time. I did prep the salmon first, crushing the pistachios, adding dill, fresh lemon juice, S&P and brown sugar, and a shot or two of Doterra Lemon Oil to give it a bit extra zestiness.
Next was the Risotto.. Jamie Oliver’s recipe says 2 glasses of Vermouth or dry white wine.. i didn’t have Vermouth in the house.. and honestly.. when he says 2 glasses.. what size glass? 6 oz? 9 oz pour? A Leyenhorst pour? LOL… So i had fun and just poured in half a bottle… which would be about 2 x 6 oz glasses.
His recipe called for garlic, onion, celery, white wine, chicken stock, butter, parmesan, and salt. Nice and easy.. but a bit labour intensive. Thankfully I had all the prep done ahead on the salmon. (did you know that WILD caught salmon (specifically NOT Atlantic) is the best for you?
Turned out pretty fantastic.. i overcooked the salmon by about 3-4 minutes.. still getting used to our gas oven.. but what a JOY to cook on a gas stove!! Oh i’m having fun…. and Guillermo is enjoying what I’ve been cooking so far.. wait til I get more adventurous!
After dinner I tackled the remainder of unpacking our bedroom. I made the mistake of watching Marie Kondo’s new show on Netflix too late last night.. so when i got home from work tonight, BEFORE I started dinner, I threw all our clothes on the bed (that hadn’t already been sorted). Since we’d already done a big purge before we moved, it didn’t take too long. She’d be proud, don’t you think??
I love Marie Kondo. Her book is great. I would love the job of organizing a decluttering people’s homes! But, back to you! Great job on dinner AND organizing. I’m impressed who cares what she thinks!!
