We’re getting our first snowstorm of the winter. To hear the meteorologists, you’d think it was the end of the world.. “triple threat” is today’s buzz word. Snowmaggedon is one of my new favourite made up weatherman words that always makes me snorfle. Mind you we have less than a cm so far.. so it’s easy for me to mock.
We were talking about how nice a snowfall is on a Saturday when we don’t have to go anywhere. I was listening to the song “Manic Monday” the other day on the radio, and heard the chorus lyric..
It’s just another manic Monday
I wish it was Sunday
‘Cause that’s my fun day
My I don’t have to run day
It’s just another manic Monday
And I thought.. hrmmm, the Bangles weren’t church goers.. cause Sunday’s are certainly OUR “gotta run days” but Saturdays are not. Bill and I try as much as possible to keep our Saturday’s sabbatical. We stay home, do things that give us rest and peace.. read, write, bake, create.. which is why my Friday’s off have become so important.. they’re the days I do all my work at home and in town.. errands, groceries, laundry, food prep, house cleaning. I Konmarie’d a few more areas yesterday “Sparking Joy”
So to start our Sabbath off, I made us both a big mug of tea early this morning and came back to bed and starting surfing Pinterest for interesting breakfast ideas that worked with what we have in the house. I ❤️ lOVe breakfast. Coming up with new and interesting ideas. So today’s was a savoury egg bake in the toaster oven.
I cut up mini potatoes and precooked them a bit in our smallest casserole dish.
Sliced up tomato, broccoli and sweet peas
And started layering
Then cheese.. lactose free Swiss for Guillermo, double smoked aged cheddar for me
As I create, this is my view..
Lastly the eggs..
Then bake for 12 min or so in a 425 oven (love my convection toaster oven!) and topped with arugula.
Side with toast and a Greek yogurt bowl with fruit and a dash of “Yummies in a Jar” jam that our neighbour gave us for Christmas.
Isn’t that decadent??
