i know you’ve heard this a bazillion times already this week but seeing as I need the reminder… Social distancing does NOT mean stay in the house. Yes, it’s -2 C today.. but GET OUTSIDE.. get some fresh air, some sunshine.. I just went for a lovely walk and then pulled out my lawn chair and soaked in the sun on the South side of our house out of the breeze for 1/2 an hour… LOVELY.
A word play on the Podleski sister’s recipe for Chicken Teriwacky, found in their LooneySpoons Cookbook. That’s what’s on for tonite’s dinner… except, as per usual.. I’m “Amy-izing” it. The BBQ is buried deep in the garage, so I won’t be grilling the chicken as the recipe calls for. Instead I’m using the sauce as a marinade and baking the chicken.
I also did 1.5x each ingredient, as I have 5 breasts, instead of the 4 the recipe calls for…
I substituted DoTerra’s Ginger oil as I didn’t seem to have any ginger root (very unusual for me!) and in today’s world of Social distancing, I’m using what I have in the house rather than going out for that one missing ingredient.
I also went a wee bit overboard on the grated orange peel. 2 tsps seemed like such a paltry amount, dontcha think??
I tried grating the garlic like I once saw on a Rachel Ray episode.. but it was messy.. couldn’t use the whole clove, nearly grated my finger along with it.. and i had garlic juice all over my fingers.. maybe a good thing in today’s world? Imagine if science proved that garlic juice combatted viruses? woooo eeeee! I wish that were the case, then our dear Mediterranean countries would be so much better off. If only there were more we could do to combat Covid-19 than social distancing which seems to get harder each day?
How about lime juice?
Recipe calls for:
2 tbsp each of the following:
fresh squeezed lime juice
low sodium soy sauce
minced green onions (with white parts)
1 tbsp grated ginger root
2 tsp grated orange zest (i think i did 2 tbsp at least…woops!)
1 tsp minced garlic (don’t add grated finger)
4 boneless skinless chix breasts (reminder to self to cross one of these pkgs off my freezer inventory)
1 tbsp toasted sesame seeds for topping afterwards
Then you’re supposed to whisk all the marinade ingredients together, bag with chicken, shake and coat well and refridge for at least 4 hours, then grill on Med for 15 min turning often. I’m baking instead in a 350 oven for about 30-35 min..
tastes great.. but would have been better at a higher temp, for shorter time perhaps – likely why it was supposed to be grilled instead of baked…. but very tender, flavourful and …. just Yummy!!
So tell me.. how are you dealing with today’s Terrible Wacky world? I’m currently laid off work, and having a really difficult time getting my EI claim submitted. I’m discouraged and feel like giving up. On one hand, could I live without the money.. maybe.. but I’ve been paying into it for 35 yrs.. shouldn’t I get it? But the gov’t is hoping to help those in greatest need.. i’m so conflicted on this… and I hate having to fight for money.
Local greenhouses around us here in Niagara are suffering, as they are worldwide. I saw a video from the Netherlands.. “buy flowers, not toilet paper”… Growers are throwing out tons of bouquets. and people are hurting financially. I don’t know if there’s anyone untouched. Those on the frontlines in healthcare, in Service Canada, in grocery stores, they are all working overtime, and are exposed regularly to the virus. They’re exhausted.
Some people are stepping up and doing really amazing things. Like Dillon’s Distillery <— (click on this link) near us, who repurposed their production room to make hand sanitizer and sprays with 65% alcohol, and are GIVING it away to front line workers to use.
Wineries and florists are selling grower bouquets from local greenhouses at cost. Today I picked up a couple of Freesia bouquets from the Watering Can and fresh cut tulips from 13th St Winery at cost to keep and give away to cheer someone else.
Just a small disappointment.. because Watering Can posted a photo of a FULL bouquet of Freesias (pic 1) and what I received was Pic 2.
They have a ways to go to open, they are very fresh cut…. but wow.. there is WAY more greenery stuffed in there than there are freesia stems. STILL, i’m glad to be able to support our greenhouses, and I love Watering Can as a company.
Besides the real fear this virus brings, the financial toll on our economy, on ourselves is scary – so many unknowns. But I keep turning back to the truths I know for certain. God is in control. He is sovereign over all.. nothing is unseen, unknown by Him. He is my Hope. My provider. It’s never been about my paycheque.. my skills, my work ethic or ability. It’s been Him, it is Him, and it WILL be Him that provides for all of us. He clothes the lilies of the field, feeds the birds in the air..
He will provide.
